600.00 gr Spaghetti, white, boiled
2.50 gr Cinnamon, ground
150.00 gr Cheese, Parmesan, fresh
1.00 kgr Beef, mince, extra lean, stewed
500.00 ml Sauce, tomato base, homemade
50.00 ml Olive oil
1.00 teaspoon (tsp) Pepper, black
2.00 teaspoon (tsp) Salt
1.00 item Onions, raw, large, item
5.00 item Garlic, raw, cloves, item
Preparation
A pressure cooker is suggested to prepare the sauce.
In low heat, add the olive oil to the pressure cooker. Fine-chop the onion with a knife or use a food chopper for quicker results. Once the olive oil is warm enough add the chopped onion and leave it for a minute.
Add the minced beef in the cooker and start breaking it into smaller pieces and and keep on stirring it until it becomes more brownish and dried... when not certain just leave a minute more.
Add the tomato sauce and blend it with the minced beef. leave it for 2 minutes while you peel off the garlic cloves.
Add the cinnamon or cinnamon stick if you prefer, add the garlic cloves, the salt, and the pepper,r and stir to blend all.
Add water to the pressure cooker, more than twice the height of the mince; this is around 1-1.5lt of water. Once the indicator of the pressure cooker reaches the right pressure, lower the heat otherwise the mince will be burnt. Leave in the cooker for 45 minutes.
On another casserole boil about 1-2 litres of water to prepare the spaghetti, add a pinch of salt if you like. Once the water reaches the boiling point, add the raw spaghetti and leave it boiling according to package instructions...usually around 8-10min is enough for al dente. Once done, remove the water using a mesh and leave the spaghetti on the side.
Once the mince sauce time is up, remove the pressure air from the cooker and check if there's excessive water in the sauce... just stick a spoon in the sauce if the spoon comes out with no sauce sticking on it then it has too much water, so keep boiling without the lid. Eventually, the water will vaporise and the sauce will become thicker.
Serve by placing a portion of the spaghetti on a plate and pouring the mince sauce on top.
