Spaghetti alla Mani

Description

This is a poor man traditional spaghetti recipe from Mani a remote area in Peloponnese. It is a simple recipe with three main ingredients. Fifteen-minute cooks will love it.


Ingredients

  • 500.00 gr Spaghetti, white, boiled
  • 400.00 gr Eggs, chicken, fried in vegetable oil
  • 400.00 gr Cheese, goats milk soft, full fat, white rind
  • 200.00 ml Olive oil


Preparation

  1. Boil the spaghetti for 8-12 minutes and strain. Once finished pour some olive oil into the casserole let it heat and then return the spaghetti to the casserole and stir for 10-20 seconds.
  2. Pour a serving of spaghetti into a dish.
  3. Prepare the two fried eggs per dish, and season it to taste. Once done lay the eggs over the spaghetti.
  4. In the same heated pan, fry the grated cheese and sprinkle it over the dish. Add raw cheese according to taste.
