Description

Ingredients
600.00 gr Pasta, plain, fresh, cooked
300.00 gr Cheese, Mozzarella, fresh
300.00 gr Cheese, cheddar, English
150.00 gr Butter
150.00 gr Wheat flour, white, plain
1500.00 ml Whole milk, pasteurised, average
Preparation
Preheat oven to 200oC.
Cook pasta per the instructions on the package. Rinse cooked pasta in cold water; set aside. For a more traditional appearance of the dish, choose macaroni type of pasta.
In medium heat, put the butter in a big saucepan (alternatively use a casserole) and stir it for 2-3min until it melts.
Add the flour slowly and start stirring with a whisk.
Without removing it from the heat, gradually add 1/4 from the milk. Keep whisking it. Don't stop stirring otherwise, the mixture will clump and will stick on the bottom of the saucepan. Add the rest of the milk partially until you add it all.
Keep stirring until the mixture transforms into a thickened creamy smooth sauce (app. 15 min.).
Add 100gr of the cheese to the rest of the sauce and keep stirring it until looks like a thickened creamy sauce. Remove the saucepan from the hob.
Add the sauce to the casserole with the pasta and mix it well.
Use a non-stick rectangular deep roasting tin or ceramic and transfer the pasta in there.
Sprinkle the rest of the grated cheese and mix it well. With a spoon make the surface even in size.
Put the tin in the oven and cook it for 40 minutes until it gets a golden, bubbling colour.
