Description

Briam or tourlou is a traditional Greek vegan recipe with several mixed vegetables, very easy to make


Ingredients

  • 1.00 item Aubergine, raw, large, item
  • 2.00 item Carrots, old, raw, average, item
  • 2.00 item Courgette, raw, large, item
  • 1.00 item Peppers, capsicum, red, raw, average, item
  • 1.00 item Peppers, capsicum, yellow, raw, average, item

  • 2.00 tablespoon (tbsp) Tomato puree
  • 100.00 ml Olive oil
  • 1.00 teaspoon (tsp) Salt
  • 1.00 teaspoon (tsp) Pepper, black
  • 1.00 tablespoon (tbsp) Oregano, dried, ground
  • 1.00 tablespoon (tbsp) Thyme, dried, ground
  • 1.00 teaspoon (tsp) Honey
  • 2.00 item Old potatoes, average, raw, medium, item


Preparation

Preheat the oven fan to 180oC

  1. Cut the potatoes, aubergines, carrots, and zucchini into 1 cm slices and crescents, then place them in a bowl.
  2. Cut the onion into four pieces, separate its skins, and put them in the bowl.
  3. Cut the peppers into pieces and add them to the bowl with the rest of the vegetables.
  4. Add the chopped garlic and set aside.
  5. In another bowl, grate the tomatoes, add the tomato paste, and mix. Add 80 g olive oil, salt, pepper, oregano, thyme, and honey and mix. Pour the sauce over the vegetables and mix.
  6. Transfer to a medium-sized baking pan, add 20 g olive oil, and cover with aluminum foil.
  7. Bake for 35 minutes. Then remove the aluminum foil and cook for an additional 20-30 minutes.


You can serve it with feta cheese, pepper, and bread of preference.
